Petrol-doused sheep wool, fresh linen, smoked hessian cloth, pine sap, aged Loire Chenin, wood ash, old ink wells, calamari on the BBQ, black olive tapenade, rubber fishing boots, creel nets on fire, brine, oyster sauce and preserved lemons under a grill. Water gives kippers in brine, salt baked potatoes, pencil shavings, mercurochrome, raw lemon juice, mutton pasties, caraway distillate, mezcal, soy sauce, smouldering hay and hospital floor cleaner. The palate is bubbling with sweet tar, ointments, cask strength limoncello, car wax, new leather, burnt sandalwood, smoked mussels in brine, calvados, iron filings, smoked artichokes, antiseptic, mouthwash, iodine drops, cough medicine and herbal liqueurs. With water there's sweet peat, smoked barley, hot grist, screeching car tyres, lime zest and raw citrus juices. Some salted mead, new car interior, old rope, mustard powder and salty butter. We acquired an Armagnac barrel from our friends at distillery A2 in Gascony, into which we combined two bourbon hogsheads from this famous northern Islay distillery.
