Succulent fruit arrived in a partially fermented fusion as ripe melon bobbed beside perfumed pear. Dried cherries and sultanas soaked in brandy offered irresistible temptation whilst a delicate fragrance delivered elderflower and honeysuckle. The yeasty tang of wheat beer introduced rich bakery notes that settled into sweet pastry and butter on hot crumpets. A whiff of fermenting apples fortified into well-aged calvados as we approached a palate resplendent in tingly spices and fruit chutney. The chewy texture and sweetness of caramel merged with coconut biscuits and ginger cake before we discovered fruit punch and a finish wrapped in sandalwood and toasted oak. After spending 17 years in an ex-bourbon hogshead this was transferred into a 1st fill red wine barrique for the remainder of its maturation.
