The nose prickles with hot stables, hay, dried grass, soft earth and a vague suggestion of warm wax at first. It goes on with chalk, clay, ink, lemon peel, graphite, steel wool and eventually these big and hearty notes of freshly baked brown bread, sandalwood and lanolin. Farmy in a beautifully understated way. Water throws up more notes of hay with some touches of quinine and white pepper. The mouth is punchy with sharp white fruits, freeze dried assorted berries, lemon wax, motor oil, camphor and then finally the sweetness from the sauternes settles in with manuka honey, wild flowers and quince. With reduction we get almond paste, vanilla syrup, milk chocolate, wood spice and toasted pumpkin seeds. Matured for 14 years in an ex-bourbon hogshead before being transferred to a sauternes barrique for the remainder of its maturation.
