We stood in the old and dusty wine cellar as the flickering light from scented candles cast dancing shadows across the vaulted stone ceiling. Heavenly aromas combined the sweet scents of oak barrels with the mushroom laden indulgence of truffles and milk chocolate. Taking cheeky samples from casks opened a world of honey and soft fruits ranging from apricots and plums to oranges and mandarins with wax covered skins. Cinnamon and cloves merged with fennel seeds and dark chocolate with a texture that was chewy, thick and full of citrus oils. Finally came a barrage of heavy antique furniture that grew into tree bark on the finish with the distinctive nuance of wine bottle cork. After spending 28 years in an ex-bourbon hogshead this was transferred to a 1st fill charred red wine barrique for the remainder of its maturation.
