The sweet charm of stepping into a patisserie greeted us with the heavy pastry of kiwi tarts and dark cherry pies set out on wooden tables. Raspberry and yoghurt flapjacks tempted us alongside gooseberry and plum tart with chilli jam and honey. The fragrance of jasmine tea intermingled with richer notes of chocolate porter and espresso coffee. The palate combined the depth of oats and malt loaf with spices as cloves, ginger and cardamom pods announced their arrival. Water released its potential as spice continued through to the finish with a milky mouth feel and a touch of leather. After spending 12 years in an ex-bourbon hogshead it was transferred to a 2nd fill ex-oloroso butt for the remainder of its maturation.
