The nose is immediately emblematic of the make. Smoked grains, hay lofts, stables, sheep fanks, fishing piers, shorelines, wet sand, beach pebbles, oysters and a squeeze of fresh lemon juice. Rather marvellous stuff. Notes of gravel, kipper, black olive, mussels in brine and old sandalwood. Wonderfully fresh, invigorating and classical. With reduction the nose displays a drier and more directly mineral profile with these sharp notes of aspirin, squid ink, graphite and wet sheeps wool. The palate delivers subtle citrus fruit wrapped up in medical tinctures, gauze, ointment, peat oils and elastoplasts. Some big notes of smoked sea salt, paprika and beach BBQ. Water gives us paraffin, coal scuttles, tool boxes and cured ham. Then touches of Rauchbier, smoked root beer and TCP.
