A tingly sensation came from salted lemons and white wine vinegar that became shrouded in puffs of herbal smoke and heather. Mounds of tropical fruit brought a joyful sweetness that merged with the hardened wood of a peat bog and the earthy tones of roasted aubergine. Pineapple rings sizzled beside smoked ham above the hot charcoal of a barbeque as chestnuts roasted with whole oranges. A spicy tingle came from English mustard but was quickly cooled by mango sorbet with segments of mandarin. The finish brought sweet peanut brittle that combined with the evocative character of peated barley and butter on brown bread. After spending 11 years in an ex-bourbon hogshead this was transferred to a 2nd fill hogshead for the remainder of its maturation.
