Description

The panel noted first a curiously sweaty waxiness. Aromas of old tool boxes, fermenting mead, olive oil, toasted pumpkin seeds, trodden clover and butter-sauteed purple broccoli. Underneath all this curious jumble were some more stalwart qualities of custard creams, crushed hazelnuts and wine gums. Water softened and sweetened things out with notes of lime oil, baking soda, digestive biscuit, barley sugar, corn bread and orange juice (not from concentrate). To taste we found warm spices, green peppercorns, lapsang souchong, a couple of stewed prunes, after eight mints, crushed ferns and a few scattered green fruits. When reduced we added sunflower oil, strawberry wine, yellow wild flowers and a resurgent, subtle waxiness. After 14 years in a bourbon hogshead this was transferred to a 2nd fill charred red wine barrique.
