The nose evokes a pipe-smoking gardener by his bonfire, a night-watchman, tea-can, a boat-builders yard; tar and sea-weed, maybe also brown sugar, cinnamon and bourbon biscuits. The neat palate has full-on, pungent smoke, liquorice bullets, embers, wet-suits, Victory V lozenges and marshmallows retrieved from the ash; the finish is like the final scene from The Wicker Man! The reduced nose, perfumed smoke, Dr Finlays' leather bag, molasses, honey-roasted nuts and pecan pie. The palate now, charry tarry driftwood, biting a fireman's glove and black bun laced with Buckley's syrup. After 7 years in ex-bourbon wood we moved this into a heavy-char, new-American oak hogshead.
