I can’t think of a more perfect whisky to celebrate with when arriving home after a long, arduous trip. It’s a dram to savour and rejoice in. That’s why The SMWS thought it was rather fitting to celebrate Tim Peake’s return to earth on Saturday 18th June with this special whisky.
Its nose is crisp and clean with savoury elegance; saffron rice softens to zesty citric overtones – freshly squeezed pink grapefruit juice and coarse-cut orange marmalade; time reveals a peppercorn-laden Steak Diane sauce. Creamy, bold and dry.
On the palate the texture is overwhelmingly dry and mouth-coating – reminiscent of a mature Sauternes or Tokaji – filled with dessert wine tartness. The palate is dominated by a sharp sweetness; old-fashioned cinder toffee, raspberry meringue roulade and a well-fired pastry, which reminded me of a freshly baked custard tart covered completely in nutmeg.
With water the pepper subsides entirely to whipped-cream aromas. The dram manages to retain its citric and dry edge though. The palate is now more savoury; water biscuits with brie and cranberry and silky rose water ice cream replicate the creaminess found on the nose. Fresh sourdough bread ushers a more subtle finish.
