Herbs and earth greeted the panel with this rather fresh and organic wee dram. We found notes of gorse, citrus rind, varnished birch wood, tea tree oil, herbal toothpaste and a saline slice of preserved lemon. Water brought out wildflowers, white chocolate, mandarin liqueur, almond paste and muscovado sugar with further curious notes of ink, pink grapefruit and coal hearths. The palate was at first redolent with peaches and violets before developing with moss, warm sawmills, petrol jelly, herb butter, vanilla essence and red apple peelings. A little water suggested pink peppercorns, perfumed elegance, cut grass and a glass of creme de menthe sipped in a summery hay loft.
