We all agreed at the first nosing that something was soaked in booze; rum-soaked raisin biscotti, crème brulee with whisky soaked sultanas or dried fruits soaked in Pedro Ximenez Sherry for a Christmas pudding. There were fresher notes appearing as well; cider ice lollies and Granny Smith apple sorbet. The taste came as a bit of a surprise; chips wrapped in yesterday’s newspaper with plenty of salt, vinegar and brown sauce sprinkled all over. Water added an earthy fruitiness like picking strawberries, drinking Champagne and green apples wrapped in waxed paper. The taste now thick, sweet and moreish - a well-made honey and plum brandy.
