On the nose we got fruit pickle, baked apple, Calvados, armagnac, paint and nail polish remover – positive and quite intriguing. The palate was deliciously sweet and slightly perfumed – maple syrup, toffee, caramel wafers, ripe pears and rum and raisin ice cream. The reduced nose had lots of orchard fruits, marzipan and syrupy, cherry-spiked cocktails served on the freshly-oiled wooden deck of a luxury yacht. On the palate now, we got Amarena cherries, plum crumble and Bakewell tarts, with an interesting finish of cinnamon, nutmeg and polished leather. After 29 years in ex-bourbon wood we re-filled this into a first-fill American oak PX hogshead.
