The breeze carried clean and salty sea air having wafted over rock pools and sandy beaches, whilst waves crashed over seaweed strewn rocks. In the kitchen thick smoke was bellowing from hot barbeque charcoals as bacon drizzled with maple syrup sizzled above. In the oven was roasting pork belly, seasoned with rosemary and tarragon and topped with a thick goo of black tar. Honey dripped over the burnt edges fresh fennel, carrots and parsnips as they slowly cooked their way to carbonised vegetable ash. Flames leapt into the air from flambéed bananas giving off the distinctive aroma of burnt toffee whilst burnt blackcurrant tarts joined liquorice sweets on a finish wrapped in coal dust, soot and scorched tree bark finish. After spending 8 years in an ex-bourbon hogshead this was transferred to a 1st fill moscatel hogshead for the remainder of its maturation.
