The nose evokes images – you are on a beach where someone has been burning whisky casks – only ash, charred wood and echoes of peat smoke remain – then hay in a dusty barn – finally, holiday hotel swimming pools. The unreduced palate has deep, visceral, intense smoke and it’s earthy – dark honey, treacle, salted liquorice, caramelised mackerel skin, herbal tobacco and garibaldi biscuits with Oolong (black dragon) tea. With water, the nose is brighter – picking up lemon and soft yellow fruits, scallop shells and singed rosemary sprigs. The palate is still earthy but less intense – salt water has now reached those charred staves.

DRINKING TIP: Late at night, by a dying fire – while a black dragon storm rages outside.
