The nose served us fruit salad in a garden by a pine forest and honey on porridge in a theatre dressing room. The unreduced palate was hot, drawing, woody and perfumed, with salted caramel, vanilla and spicy fruit chutney. In reduction, the nose opened up musky aromatic talc, lemon-scented soap, mincemeat pies and hot-cross buns*; we were now being served Pimms. On the palate, that fruitiness was turning tropical (pineapple, papaya, mango, custard apple); we also got vanilla ice-cream and Refreshers and the heat in the mouth grew considerably softer – now a ginger squiggle on a sweet, fruity canvas. (*spiced bun with raisins traditionally made at Easter)
