A dusty, malty aroma at first before fruity notes of pink grapefruit, gooseberries and slightly unripe peach took centre stage whilst, lurking in the background, a vanilla ginger spice cookie. At the start sweet and chewy on the palate neat but soon followed by a spice explosion of ‘Persian jewelled rice’ (named for its gemstone colours) – using dried barberries (ruby), saffron (gold), toasted pistachios (emerald) and almonds (pearls). With some water, fresh pickled ginger and marshmallow meringue whilst on the palate now a dry Rob Roy cocktail (Scotch whisky, dry vermouth and a lemon twist) alongside some chopped up bitter dark chocolate.
