We found ourselves in the kitchen and something’s cooking or baking; Chinese spare ribs and baked ham with a brown-sugar honey glaze, and whilst waiting a bottle of Malmsey Madeira wine was opened. To taste, it got even hotter in the kitchen with flambé bananas in orange liqueur and brandy and we now needed a hoppy/malty Red Ale to quench our thirst. On adding water we stepped outside and checked on the bacon and pineapple cubes which were in a smoker charged with maple flavoured wood chips as we were preparing a grilled pineapple salsa using red onions, cilantro and lime juice.
