We imagined sitting in leather armchairs late at night just having thrown the last log into the open fire, nibbling on salted plums and candied olives. Initially a kick like with cherry chilli liquorice, followed by spices (cloves and cinnamon) and finishing very much on a dry note. With water earthy aromas with hints of tobacco, thick cut marmalade and hoisin sauce, whilst to taste now a rich malted fruit loaf with plenty of currants, sultanas and raisins as well as lightly sweetened spiced oven dried orange slices. After nineteen years in an ex-bourbon hogshead we transferred this whisky into a 1st fill PX hogshead.
