The Panel were immensely impressed with this one. A bountiful nose brimming with autumnal leaf mulch, waxes, soot, wood oils, hardwood resins, camphor, old wine cellar, aged Sauternes, sandalwood, cherry bakewell and prune jam. With water we found a sense of real age emerging in the form of Dundee cake, spiced plums, quince paste, hessian, dark fruit compotes, apricot jam, fig rolls and more dunnage and earthen floor notes. The palate was seductive with herbal teas, aged ointments, cherry tunes, Battenberg cake, wet earth, white balsamico, bitter chocolate and molasses. Water gave us treacle sponge, banoffee pie, sweetened black tea, spiced oranges and a slice of prune and Armagnac tart. Previously matured in bourbon wood for 25 years.
