A textbook example! Lean smokiness at first, then bacon frazzles, soot, burning newspaper, black olives and tarry old rope. Some light fragrant peat smoke emanating from an old cow shed. Dried herbs mortared together with rock salt and dark soils. Reduction brings wild garlic, horseradish, duck confit with piccalilli and salted butter. Gets more piquant with cornichons, space invader crips, grainy mustard, river mud, frying pancetta, vase water and old car batteries. Lovely madness! The mouth opens with an early morning settled fog, then parts to reveal gravel and muddy minerals. A big welly boot in the mouth. Smouldering dung, tractor engines, boiler smoke funk, rotting tar, wilted geraniums, pongy soot, long cured game meats and some very old leathery pinot noir. Water doesn't calm things too much but does bring some fascinating and lovely notes of smoked mead, gentian distillate, waxed canvas, hot earth, smoked sea salt and fermented limes.
