The nose begins with overripe oranges, green banana, whipped cream, gooseberry tart and aged hardwoods. A few chunks of ripe watermelon in the background as well. Water enhances this watermelon fruitiness and adds warm gingerbread, pomegranate molasses, dried red currents, date compote and fig rolls. The palate is full of viscosity, mixed spices, tutti fruitti intensity, waxes, runny honey, a wee nibble of tannin, ripe pear flesh, melon, peach stones and botrytic grapes. Water enlivens things further and adds rich waxy tones, wood polish, chocolatey tannins and a more complex, age-accented profile overall. Matured for 18 years in a bourbon hogshead before transfer to a 1st fill charred red wine barrique.
