77.49 - We found dark chocolate tart with a spiked blackberry coulis and sticky toffee pudding in a caramel sauce on the nose neat. On the palate we added smoked sea salt flakes to the caramel sauce as we enjoyed slices of dry cured venison. With water we were barbequing glazed honey & mustard sausages before we had a glass of “sauvage and animale” red Burgundy wine - that extraordinary intense, big, rich and gamy black fruit flavour-packed mouthfeel with a firm finish. After nine years in an ex-bourbon hogshead we transferred this whisky into a 1st fill barrique.

84.32 - We were sitting on a sunny warm afternoon in the garden next to juniper bushes and a pear orchard, ready for the harvest, enjoying a strong cup of Darjeeling tea accompanied by apricot oat slices. The taste neat was a hot, sweet, surprise – spiced roasted sugar-glazed pears, spiced chai Turkish delight and sweet heat candy. When we added water the evening drew in and we mixed old fashioned cocktails with bitters, slices of orange, maraschino cherries and whisky. We kept on chilling but now with chocolate dipped candied orange slices, iced fairy cakes and cinnamon apple muffins.
