A fascinating nose neat with the delicate fruit scent of cranberries and red grapes before custard tart with nutmeg and then finally braised red cabbage with apples arrived. A fruity spiciness of peppered blueberry salsa over vanilla ice cream on the palate neat, whilst a bitter chocolate & cardamom ganache in the finish. When we added water we walked through an exotic market with aromas of fruits, vegetables, spices and herbs as well as leather and tobacco and we finished by having a lychee and mango salad with yuzu, mandarin and black pepper syrup. After twenty-nine years in an ex-bourbon hogshead we transferred this whisky into a 1st fill charred red wine barrique.
