Description

The initial aroma is of fragrant demerara rum, ripe banana, mint liqueur, macadamia nuts, rum n raisin ice cream and spiced plums. We also nose rosehips, African honyebush tea, the warmth of wood spice and furniture polish. With reduction comes dark fruits, sweetened oatmeal, citrus peels, crystalised tropical fruits, hardwood resins, marjoram and hot chocolate. Some medical throat sweets also make their presence known. To taste it is full of juicy plums, burns raisins, dried apricots, aged plum wine, sultanas, old madeira, camphor and aged balsamico. With the careful addition of a small drop of water we encountered an abundance of juice fruits, orange bitters, lemon peel, menthol gum, eucalyptus sweeties, cured meats and black pepper. Previously in bourbon hogshead for 15 years before transfer to a first fill PX hogshead.
