Notes

Like drinking a chilled glass of oloroso sherry amongst terracotta pots filled with clean earth and fresh herbs whilst from outside the sweet smell of orange blossom wafted in through the open door. The palate was viscous and coated the mouth with chewy warm toffee, orange oil and full fat milk. Then a pleasing spice developed like rye whiskey that mingled seamlessly with the sweetness of ripe red fruits. The complex nature expanded into dried porcini mushrooms, peppermint, coconut and the fruity character of white wine from Provence. After 26 years in an ex-bourbon barrel it was transferred to a 1st fill charred ex-red wine hogshead for the remainder of its maturation.
