We noticed at first the deep golden brown colour which was followed by elegant, delicate but at the same time rich aromas of caramelised peanuts, cinnamon hazelnut biscotti and roasted figs wrapped in Parma ham. The taste neat was that of a sticky, dense, chewy malt loaf with mixed dried fruits and sultanas as well as chocolate coated cinder toffee – maybe a little rough around the edges! With water however it smoothed out very nicely; spiced orange cake on the nose and ice cream with a tangy maple walnut cranberry sauce on the palate. Aftert 13 years in a 2nd fill Oloroso butt we transferred it to a virgin oak toasted hogshead.
