It was unanimously noted by the panel just how creamy this one was at first nosing. Spiced mascarpone, pana cotta, clotted cream, fruit scones and marzipan were all noted. As was damp dunnage earth, waxes, lambic ale and soot. With water there was shoe polish and warm steel wool along with beeswax, horse saddles, cow shed, straw mats and macerated cherries. The mouth was potent with notes of tar liqueur, gorse flower, rapeseed oil, cranberry gravy, fermenting cider and dried apple rings. Reduction brought aged dry white Bordeaux wines, browned butter, pineapple cubes, elderflower cordial, milk bottle sweeties, dried sage and green peppercorns in olive oil.
