Aromas of autumn filled the air as soft berry fruits mingled with damp leaves on a forest floor. The alluring whiff of baked apples and pears moved towards a boozy trifle laden with thick cream before toffee apples dipped in dark chocolate. A hint of oloroso sherry introduced the complex character of oxidised fruit with strong nutty notes as walnuts and hazelnuts combined with truffles and wild mushrooms. The palate was chewy and dense with a spicy kick when neat. Water displayed a move towards gamey tones with wild venison but with a milky texture that struck a good balance between heavy weight and elevated acidity. Milk moved into fudge milkshake before old wood and lambs wool rounded out the finish.
